The fragrance of banana bread baking in your home can feel very warm and inviting.

Banana bread is easy to make and delicious. The combination of sweet bananas, vanilla, and spices can be a comforting treat after a long day. When it’s almost done baking, the nicest part is inhaling the scrumptious and reassuring aroma throughout the house.
We’ve all been there, we buy a new bunch of bananas only to discover that they have ripened quickly since they were not eaten or used within the first few days. Now what? We cannot throw away these delicious bananas. They add sweetness and taste to the banana bread, so the riper the better. Now is the perfect time to make banana bread!
What I love about this recipe is that most of the ingredients are pantry staples and many of us already have them at home.
Here is a list of what you will need:
1. 4-5 ripe medium-size bananas. If you are using large bananas, you can use 3 of them.
2. All-purpose flour
3. Granulated sugar
4. Brown Sugar
5. Baking powder
6. Cinnamon
7. Baking soda
8. Salt
9. Vanilla extract
10. Eggs
11. Melted butter
12. Greek yogurt or sour cream ( This is what makes it moist and tender. You can use vegetable oil or canola oil as a substitute)
First, add the bananas into a medium-sized mixing bowl and mash them with a fork. Next, add all of the wet ingredients and mix them together; the melted butter, whisked eggs, vanilla extract, and the Greek yogurt (or whichever substitute you choose: Sour cream or oil). Greek yogurt, sour cream, or oil are essential if you want moist banana bread.

In a separate large mixing bowl, add all of the dry ingredients and mix them together; flour, sugar, brown sugar, cinnamon, baking powder, baking soda, and salt.

Now, add the wet ingredients into the bowl with the dry ingredients. Use the spatula to gently fold the flour mixture into the ingredients until they are fully incorporated. Be careful to not over mix. Over-mixing may make the bread tough or chewy. Add the mixture to a coated metal loaf pan. Use the rubber spatula to remove all of the mixture from the bowl.
Can I add any toppings or mix-ins?
Of course! you can add in your choice of nuts such as walnuts, pecans, or even chocolate chips. Add any mix-ins before folding the mixture together or sprinkle on top.

Bake at 350°F for 50 minutes. Check for doneness using a toothpick or fork after 50 minutes. The banana bread is complete if the toothpick inserted in the center comes out clean. If not, give it another five minutes or so; it ought to be OK by now. Remember that baking times can vary depending on the oven and whether you use a glass baking pan.

Once it is done baking, allow the bread to cool down for about 15 minutes. Finally, carefully remove it from the pan and slice, serve, and enjoy!
Thank you for stopping by! Love, Liz.
